Gonzague is a French national who has been living in Ireland for some seven years. He started at the bottom in the restaurant business and worked his way up. He wanted to open a business and in 2002 when he had saved some money, with the help of First Step and assistance from Bank of Ireland he was able to acquire a juice bar in the Epicurean Centre in Liffey Street.

Today, Chez Max, located just outside Dublin Castle and on the edge of Temple Bar, is a bustling, thriving restaurant providing traditional French fare and music from 8am until midnight, seven days a week, serving continental breakfasts, snacks, lunches, pre-theatre and dinner at affordable prices.
The staff are all French and the bistro caters to a discerning clientele of legal eagles, politicians, sophisticated Dubliners and tourists who enjoy the cosmopolitan atmosphere of this very lively establishment. Vaut le voyage!
